A client of mine has the following Problem:
If he wants to send an email from the HP Scan Utility, he can only do so from the default mail account. As soon as he uses another account, the text he typed ("email body") disappears after sending.

HP Scan requires the sender address to be in Outlook (installed client software on the computer).
The software might not be flexible enough to tolerate changing the sender's address.
If not done, try adding another email address to the Outlook 365 client - set to both "send / receive"

If Outlook 365 security requires 2-Step verification, open the alternate email address at the email provider > open the security section > verify that the email is set to use 2-Step verification > Create an App Password for mail > Use the App Password in place of the regular password when configuring the client mail setup.

If he has not done so,
Try / Consider
Add the sender's email address to the Microsoft / Windows Mail application
Use HP Smart (Windows) application to Scan > optionally Edit the scanned content > Done > Share (to Email)
