Hi!
When i scan old photos to archive, they're coming through far too bright and washing many out - struggling to find any way of darkening the scan - trying to scan 20+ photo albums, so this is already frustrating, please help 😞
Using deskjet2720e on Windows 10, drivers are up to date, just very frustrated with it currently

OK -- what you can do depends on the tools you use.
The HP Smart app can Scan > Edit > Adjust colors and balance before saving the scanned content.
The Windows Photos app can scan and Adjust the content before saving, too.
Both applications are fairly easy to use.
At this writing, neither of these apps will scan and separate a flatbed full of photos into individually saved files.
Side Bar: OK - extracting individual photos from a group on the flatbed can be done, but the process is painful and must be done manually.

It's also nearly impossible to correct the color and balance on a single photo when working with a group of photos.
HP Smart can be used later to Scan > IMPORT a single photo > Edit > Adjust

HP Scan can be used to scan photos and adjust the color brightness -- like the apps, the color correction tools are not extensive -- they might do the job well enough if the photo is in good enough condition.
HP Scan does let you scan groups of photos on the flatbed (glass) and then save each photo as a separate file.
You do need to edit the contents together as a group. The results might be satisfactory if the photos are similar in color, balance, and condition to start.

If you intend to reprint the photos -- for example - for the purpose of repopulating your family photo albums, each photo can be retouched (again) before printing. The simple print apps and software won't do a spectacular job for this -- you need decent Photo Editing and Print software.

Irfanview provides an exceptional software experience that can be used for a variety of scan and print tasks, including custom print size, tiles, and the “Mirror” or horizontal flip function, and several other options not found elsewhere.
- Create a Restore Point (optional, recommended)
- Download the appropriate version (32bit or 64bit) of the program from the Website and install the program
- Additional information at the website, including: FAQ
NOTES
- Both 32bit and 64bit software versions for Windows are available.
- Irfanview is also available as an Windows 10 Application from the Microsoft Store

I don't know the reason for the difference between this printer and the "old" printer.
A Guess:
"Old Printer" scanner light might not have been as bright.
What?
The light used to scan the contents can dim over time.
It's also possible (that) the old printer's light scan light as never as bright at the scan light on this printer.
?
If the light used to scan the content is very bright, the results will be different from a scan using a dimmer light source.
