I have lots of files I need to digitize.  Within the folders are files 1-2 pages in length.  How can I scan a batch of documents and then save each scanned item individually?

Welcome to the HP Community.

I see your added tag for HP Smart - and no information for your Operating System / version.

HP Smart is not the right tool for this job - it cannot tell the difference between documents and cannot discern when a document contains more than a single page.

What about HP Smart Windows / MacOS?

The same limitation is true for HP Smart Windows and MacOS versions - the application does not read your data to determine the length of a document.  That said, there are a vast number of software / programs available for Windows (and likely MacOS) - the possibility does exist that you could find what you want.

What to do?

What you do depends on what you can find (applications / software) that will actually do what you want in the Operating System / version you are using.

What if?

If you cannot find an application or software that will read and accurately scan your documents into the correct number of pages for that file, you might try approaching the job from the other side.

For example, it might be easier to scan a number of sheets into one document (say about ten pages each run) and then find / use a free or purchased software to "divide" the document as you wish into however many individual documents are appropriate.  At the least, assuming you protect the original scanned / saved document, you could find something to edit and remove unwanted pages for each round.

That said, except for the physical difference of adding the documents you want scanned to the printer ADF each time, opening and splitting large numbers of files might prove (just as) tedious and time consuming.
