Thanks for using the HP Support Community.
This is possible but only with the HP FULL software scan.
Can you download and install the HP FULL Solution Software for your operating system:
This resource will show how it's done:

Once you have downloaded and installed the FULL feature software, you will be able to print and scan.
This example shows how to scan and save as individually files :
