Having the same problem. It did not start happening like this until the May 10th update, so something went wonky there. I thought I had automatic updates turned off, but when I reset my computer a couple months ago, I forgot to un-click auto update. It's frustrating when updates take away the functionality and break fully operational software. I hope someone can provide a "fix" to this soon, as it is very time consuming and frustrating.

Same as the first guy. My scanning preferences in HP Scan revert to default after every single scan. Very time consuming to have to switch them to what I want when there are many pages to scan. This didn’t start happening until your May 10th update of the software.

Try the below suggestions -
Try updating mac and printer firmware
To update the printer's firmware, refer - HP Printers - Updating or Upgrading Printer Firmware
To update your Mac, try these steps - How to update the software on your Mac
Uninstall HP Easy Start
- Click on the Spotlight icon and type HP Uninstaller or by opening HP Easy Start.
- Click on Continue to uninstall the software.
- When prompted for a password, type in your system password
- You can also uninstall it by opening HP Easy Start.
Download HP Easy Start and install the printer.
- Download HP Easy Start and follow the on-screen to complete the installation.
You can also install the HP Smart App and print and scan using the app.
Try and set preferences and scan multiple pages
