I have the same issue that has been brought up more than once with no resolution. Here's an example of someone with the same problem:

I'm using the Image Capture app on my Mac (tried on several different Macs) and whenever I scan to PDF, all the colors are inverted (green becomes magenta, etc.). The colors are correct in the image preview, and are correct if I scan to an image instead of a PDF file. I would love to solve this problem because scanning color documents is extremely inconvenient right now.

Welcome to the HP Support Community.
Have you tried using other scanning methods like Easy Scan? From the Applications list, open HP Easy Scan. Click the Scanner drop-down menu, and then select your printer.
