I want to copy from the glass & message indicates setup is for envelope. Where do I change it to 8 1/2 x 11 which is the paper loaded?

I understand you would like to change the paper settings on your printer.
Please try few steps recommended below.
To begin printing on the custom paper size, select the new size for the print job.
Load the custom-size paper into the paper input tray.
Open the item you want to print.
Click File, and then click Print.
In the Print window, click Preferences, Properties, or Printer Properties.
Click the Paper/Quality tab.
If Paper Size displays, select the new custom paper size in the Paper Size drop-down menu.
If Paper Size does not display, click Advanced, and then select the new custom paper size in the Paper Size drop-down menu.
Click OK to close the Properties dialog box, and then click OK or Print to print the document.
Refer this article to further troubleshoot creating customer size issues.

Please try few steps recommended below.
You can customize copy jobs using the various settings available from the printer control panel.
In the Copy menu, touch (Copy Settings) and change the desired settings.
And select resize and select the option accordingly.
Refer this user manual for more information.
Note: Refer page 33.
