I use my HP printer app on my phone for scanning documents. When I select an email address to send the scanned document, it does not transfer to the address. Where is the scanned document going? How do I retrieve it?

Not knowing which printer you are using, which HP app you are using, and which phone you have, I would guess the scanned content is not actually going anywhere -- that is, when the scan content cannot be emailed, it is dissipating into nothingness.
IF you are using HP Smart with a supported printer, and a supported iPhone, consider using Scan -- then Save (the content) first, and, before you leave the application, go back and try to email the scanned content.
Perhaps try scanning something easy and sending it to your own email first.
