Hi.
Scan to email does not work any more because Google is not supporting anymore less secure apps - however, I was able to workarond this via google 2FA.

Any chacne that HP will be able to overcome the less seucure apps? or should one use from now on only 2FA?

The video you posted is the correct method to overcome the end of less of secure app support.

Indeed this is the correct way to setup a Google account with their recent security changes, I would also suggest trusting the used device so it will not ask to sign in to your Google Account any time:
