Since updating my printer with the latest update, when I scan a single document (either one page or multiple), my computer attaches it to all the other scans that I have done, making one big document. I have tried everything and some advice would be really appreciated.

Please try the steps in this guide Scan from Printer Fails or Cannot Enable Scanner (macOS Sierra) as that deals with scanning on Mac OS X 10.12 Sierra.
