Hi, have replaced an ink cartridge today with an official HP product. But printer won't function as it says the chip is wrong. Have removed the cartridge, cleaned everything, unplugged printer - but still can't print.

Probably debris in contact area but MAYBE fake. It can happen if bought from 3rd party or auction site.  Not likely if instant ink.

Spoiler
To check if an HP toner or ink cartridge is genuine, look for a security label on the cartridge, scan the QR code on the label with your phone, and then go to HP's website hp.com/go/ok to verify the serial number on the label; if the label appears tampered or the serial number doesn't validate, the cartridge is likely not genuine. Tips on avoiding counterfeit ink.

More likely needs cleaning

==>Debris such as glue / tape residue or dried ink in the electrical contact area of both printhead and cartridge<==
Official (HP) advice on printhead cleaning is here.
This link gives advice on cleaning the 8600 printhead and removal is described here.
This is another type of printhead cleaning, different from the above.

Cleaning and removing ink from the print head is shown below by our "Scullery" team.

An HP original video on how to clean the printheads by our experts. Yes, this can get messy, but it works. If your ink levels are good but you are printing blank pages then this is likely the solution.

Some printers have a printhead cleaning procedure.

To clean the printhead on an HP printer, access the printer settings through the HP Smart app, navigate to "Print Quality Tools," and select "Clean Printhead"; this will initiate a cleaning cycle where the printer will automatically run a cleaning process to clear any clogs in the printhead

Inkjet and printhead cleaning kits are available

This video shows how to remove a printhead

Consumer inkjet printer printheads typically last for several years, with some lasting up to 10 years or even longer. However, the lifespan can vary greatly depending on usage, maintenance, and environmental factors.

Please read this post then provide some details.  What printer model? What is the cartridge number?  Is it the same as the cartridge being replaced? What operating system? How is the printer connected - USB, wired LAN, Wireless LAN, bluetooth? What exactly are any error messages on the printer or computer screen?
