Are more than one TC8 touch panel not able to be used with a G7500 in Teams Room Mode?
I was able to pair both of them and log them both in, but only one is showing the Polycom Teams Interface.

Welcome to the HP community.
Unfortunately, your post does not contain the currently used Software version for the HP Poly products and the Partner application version you use.
This is important, especially in the future, when someone finds this post in days, months, or years and may depend on what we volunteers can provide as an answer..
Please do not simply edit the original post but reply with the versions.
In the FAQ or the Read 1st section, we remind users why this is important.
For your actual issue, you can use only one / 1 TC device when in Microsoft Teams mode. This is not a HP Poly restriction and any change to this would need to come from our Parter Microsoft.
From our Poly G7500 supported peripherals by provider guide:
System controllers supported on Poly G7500 systems by provider
Poly G7500 systems support multiple controller options.
The Microsoft Teams Rooms controller on the Poly Trio C60 speakerphone offers limited functionality and isn’t supported as a Microsoft Teams Rooms controller. Use a connected Poly TC10 or Poly TC8 or touchscreen monitor to control your Microsoft Teams Rooms environment.
In Microsoft Teams Rooms and Zoom Rooms modes you can use Poly TC10 as a room scheduler.
Number of supported controllers by provider

Poly Video mode supports connecting a total of five touch controllers to the system. You can connect a combination of Poly TC10, Poly TC8, and Poly Trio C60s (up to four) for use as touch controllers.

Zoom Rooms supports connecting a total of five touch controllers to the system. You can connect a combination of Poly TC10, Poly TC8, and Poly Trio C60s (up to four) for use as touch controllers.
You can also connect a Poly TC10 to your system as a Zoom Rooms scheduler. The scheduler doesn't count against the five room controller you can connect to your system.
- All other providers support one Poly TC8 or Poly TC10 touch controller.
