We need to print to our HP 8710 BOTH within our Mac Bonjour ethernet network AND via our wireless network from a couple of Windows laptops and a few phones.
We had it set up that way somehow. Then we had some trouble and ended up "restoring default settings".
We have it working on the ethernet network (ethernet cord plugged in).
When we try to set it up for wireless, it tells us we can't because of the ethernet plug-in.
Help.

I think you need to setup wireless from computer(s), not from printer. Computer(s) and other device(s) will see the printer thru the wireless router and connect to it. Or try another way

I don't think the devices that need to use it wirelessly can see it until wireless is turned on on the printer.
And, it won't turn it on, it says, because it's plugged in to the ethernet network.
I understand what you are saying ... but in this case, it's not the case.

That why I set up my loan HP Officejet Pro 8730 (a sister of your printer) the way on the image above.

Sorry to jump in here. But you can connect the printer either Wireless or Ethernet, but not both at the same time. When the Ethernet cable is plugged in the Wireless is automatically disabled. Why? Only 1 IP allowed per device on your router.
Just pick which one you want to use and install the software on all computers. The software looks at the router for connection to the printer.

We had it working before ... both wirelessly and via Ethernet. So, I know it can be done.

Again, I'd love to set up wirelessly only, but our main computer network cannot be wireless because it affects (negatively) our main business application. So, we need to have the printer set up as a Boujour printer on the main computer network and wirelessly for the PC laptops and phones, etc. And, again, you can't set the printer up on the wireless network with ethernet plugged in ... it won't even let me turn wireless ON, so the router can't see it, thus, the PCs and phones can't see it.
I do know that just yesterday morning before we had an unrelated issue and had to reset to default .... it was connected both to the ethernet network and wirelessly.
Anyone else wanna give this a shot?

Sorry, you may have thought you had it working, but no. USB and Wireless is allowed along with USB and Ethernet is allowed. Some folks call USB wired, but not really.
Bottomline, only one IP allowed per device to your router. Either by wireless or Ethernet, but not both. Not needed and is not allowed.

Hmmm.
No USB at all, ever.
Our wireless router is connected to our Ethernet Network, but we don't allow it to be accessed by the computers on our Ethernet network.
Is it possible that that the PC was connected to the network via the wireless router and therefore able to print to the Bonjour printer on the Ethernet network? The PC seems to be able, in this manner, to print to other printers on the ethernet network as well (HP Color LaserJet CP4025 for example).
If THAT is a possible, why is the PC unable to see the 8710 when it can see all the other printers? It is NOT connected via ethernet to the ethernet network.
This is becoming more of an IT question than an HP Printer question it seems ... but maybe someone out there will be able to give us a clue?
