I have an HP DeskJet 2700 series printer. I NEVER print in color yet I occasionally get messages to replace the color cartridge. I'm sick of spending money on something I never use. Is it possible to bypass the requirement for a color cartridge?

The Deskjet 2700 series printers should operate in single-cartridge mode. Try the following: with the printer turned on open the printer to access the cartridge. Remove the color cartridge and set it aside, then close the access for the cartridges. Now send a print job to the printer. If it prints and indicates "single cartridge mode" then it will print everything using the black cartridge.
Note: there are some limitations with single-cartridge mode. If you are printing with photo paper you will need a color cartridge, even if printing black and white photos. The pigmented black ink is not compatible with photo paper.
