if Win10 updates are screwing up the installed HP printer drivers on your machine, perhaps it's time to use 3rd party tools like windows update minitool (WUMT) or WAU manager to control Win10 OS updates since Win10 seems to automatically download & install OS updates whenever they want. sometimes certain WIn10 updates cause more problems than fixing them since there is no option to officially disable auto updating.
though if you are using Win10 Pro (not Win10 Home), there is an option to defer or delay updates of any kind.
starting with the 1903 version, Win10 home & pro users have the option to pause updates for a certain amount of days.

The issue with the TABLOID paper missing from the choice of paper size is not Windows Update related. The drivers were installed from HP download site.
And by the way, since I installed the K850 driver as a replacement, I got my first BSOD in ages...
