I just purchased a HP Deskjet 3755. I used the starter ink cartridges and assumed it wasn't printing in color because those cartridges weren't meant to last. I just installed BRAND NEW full set of ink cartridges and still NO color. What gives?

Hi,
I would assume it is a driver problem or maybe a generic driver usage.
Please try following HP Easy Start below to ensure the latest Essential Software is installed and then check if you may see any difference:
http://ftp.hp.com/pub/softlib/software12/HP_Quick_Start/osx/Applications/HP_Easy_Start.app.zip
If the same persists once completing the installation try resetting the printing system as following:
*Be aware that resetting the printer system will remove any existing print queue and reset any customized driver settings.
Click the Apple menu, and then click System Preferences .
Select Printers & Scanners.
Right-click (or Ctrl + click) your product in the Printers list in the left panel, and then click Reset printing system .
Click OK to confirm the reset.
Type your user Name and Password .
Click OK . The printing system resets.
Next click the plus sign to re-add the printer, ensure the printer model is selected within the Use drop down menu and check for any difference.

I am having the same issue... my printer prints cyan, gray and black but not magenta or yellow. I have the tri-color ink cartridge and the levels look fairly good. I printed the printer status report and only blue and gray stripes of color were printed. The same issue occurred when I did the printer head alignment text... only cyan, nothing else. HELP!!! 😞
