I just bought a new HP OfficeJet 8015e. It came with ink cartridges. I signed up for HPSmart print plan. HP told me to replace the ink cartridges with new ones they sent me. Will I be able to use the original cartridges in the future if I cancel the HPSmart print plan?

At this writing:
HP Ink cartridges installed in the printer at the time the printer is enrolled become part of the Instant Ink Service.
In so much that I am aware, removing activated cartridges "after the fact", that is, after they are made part of the subscription does not remove those cartridges from the contract.
Subscription cartridges, those activated as part of the service, and all the Instant Ink cartridges sent to you, only work with an active subscription.
That said,
If you do not want or need the service, you can certainly cancel.
