Product: Color LaserJet Pro MFP M479dw

We have this HP Color LaserJet Pro MFP M479dw printer at the office where we configured a custom SMTP server to send scan to email. It works reasonably well when scanning a single page but when we want to add additional pages, the scan will fail with a generic error "Scan Error: There was an internal processing error. Please retry or manually check the firmware updates.". 

 

I tried installing firmware update but the printer was up to date. I tried unplugging the printer for more than 1 minute and replugging it and the error persist. So the send to email works but ONLY for a single page PDF. How can I diagnose better what's going on.
