When I want to check my ink levels it comes up with two different icons for what, I assume, is the ink cartridges. One has an oval icon below it and the other what appears to be in infinity symbol. I'm not sure what each is representing. Again I have to assume one is for black with the other being color. I have been looking online for an answer but all the 'manual' says is to check the level, not what the icons mean. Any help is greatly appreciated.

The oval symbol is for the color cartridge, the butterfly symbol is for the black cartridge as shown in Solution Three of the document here.

At what point do you need to replace the ink?  As in how low does the indicator get?received_10156022892065513.jpeg

To be more helpful with your post, you can add key information if you desire: 
1. Product Name and Number (please do not post Serial Number)
• Example: HP Pavilion DV2-1209AX or HP Deskjet 3000 Printer CH393A
2. Operating System installed (if applicable)
• Example: Windows XP, Windows Vista 32-bit, Windows 7 64-bit
3. Error message (if any)
• Example: ""Low disk space"" error in Windows
4. Any changes made to your system before the issue occurred
• Examples: Upgrading your Operating System or installing a new software; or installing new hardware like a printer, modem, or router.

The ink indicators can go to about zero.  You do not need to actually change the cartridges until print quality starts to suffer.  As the ink indicator gets low (as yours indicate) you may want to consider having a replacement on hand so you can continue if the print quality starts to deteriorate.
