I recently signed up for instant ink with HP but changed my mind the following day and cancelled. I have received ink and spoke to HP who don’t want it back. Is there anything stopping me from using the ink rather than throwing it away?

The Instant Ink cartridges will not operate unless you have an active subscription to Instant Ink.
Note that your account will still be active to the end of your first billing period, and you will be charged for the subscription (and any overages) at the end of the billing period. If this is the case the cartridges would work until the end of the billing period, but if you use more pages than the subscription amount you will be charged for excess pages.

- CANCELLATION.
Cancellation by You. You may cancel Your Instant Ink Service at any time online at www.hpinstantink.com or by calling the HP Customer Support at the HP Customer Support Telephone number noted at the beginning of this Agreement, and Your Instant Ink Service will then be cancelled effective as of the last day of Your current Month Period. For example, if Your current Month Period runs from January 15th to February 15th, and You submit a cancellation request to HP on January 30th, Your Instant Ink Service will be cancelled as of February 15th. Your Payment Method will be charged in full for Your last Month Period, and no refunds will be provided for Service Plan Pages or Rollover Pages that You did not print during that last Month Period. Simply removing the Instant Ink Program Cartridges from Your printer, not printing, and/or not connecting Your printer to the Internet does not cancel Your Instant Ink Service or otherwise stop the Billing Cycles.
