When I try to print from "Firefox" it tries to send a fax. If I try to close the fax, the page never prints. I have no phone line and wish to disable the "Fax" funtion.

Welcome to the HP Community Forum.
Your "default" printer might be set to be the "fax" instead of your main Printer.
See the following:
Print to Printer without First Saving to File
In general, if you do not set up the fax -- and you do not access it accidentally -- you should not have to worry about it.
More information can be found about fax in the User Guide, Page 62.
If you have concerns that "something" is entered into the fax setup about which you are unaware, you can check / look at your fax setup (along with all the rest of your printer setups) using your EWS link to your printer.
Example:

How to prevent me from even accidentally selecting the fax?
I'm using CutePDFWriter and Hp officejet Pro 8600 printer, I do not wish, need nor desire to see the fax option in my application's printing menus.
How to remove the fax option from printing menus alltogether?
Too often I've unintentionally -- i.e. by mistake -- selected the fax. I do not wish to do that anymore.

CutePDF Writer appears to be software that promises to provide a PDF formatted file from "almost any printable document".
Although the FAQ for the product explains how to set up the program, it does not appear to provide any information on formatting the menu setup.
If you have questions about the program and how to manage it, I suggest you contact the program writers / Support group for the software.

I strongly recommend that before you make changes of any type of your computer that you create a Restore Point. As well, make sure your File History backups are current (Windows 8.x and above).
Create Restore Point
Stop all programs: Browsers, games, Applications, etc.
Control Panel > icon view > System > System Protection >
Click (Highlight) your main disk (C) > Select Create a Restore Point

You might try an editor that provides the ability to Add, Remove, Edit Context Menu items in Windows 7 / 8 / 10

Although not recommended, if you wish to take a more direct approach, you might move / rename the Fax* programs in the folder that provides the software for your printer.
You may need to take ownership of the folder / file -- this document does not cover taking over the control and ownership of system folders / files -- there is lots of information and howto on the Internet to provide direction.
Example:
Folder >> C:\Program Files\HP\HP Officejet Pro 8630\Bin\
Program >> FaxApplications.exe
Understand that removing / renaming a program in this manner does not remove that program from any contextual menus in which the program is located. The change simply prevents the program from executing when the program name is called / clicked / or otherwise requested.

I'm sorry if my message was not clear:
I do not need, or seek any help to CutePDFWriter, I just mentioned it as _an_example_of _other_ printers besides [HP OfficeJet Pro 6800 (Network)]
Although [HP OfficeJet Pro 6800 (Network)] is my default printer I sometimes need to select other printers. When returning to my default [HP OfficeJet Pro 6800 (Network)] printer i need to select it from applications "File" -> "Print...-> "Print, Printer name:" list of available printers. All too often I select [FAX - HP OfficeJet Pro 6800 (Network)] instead of [HP OfficeJet Pro 6800 (Network)].
From (Windows 7) Devices and Priners I cannot remove the [FAX - HP OfficeJet Pro 6800 (Network)], as there is only one HP OfficeJet Pro 6800 device.
So my desire is only to remove [FAX - HP OfficeJet Pro 6800 (Network)] from windows aplications applications "File" -> "Print...-> "Print, Printer name:" list of available printers.
