How do I override or disable the ink cartridge expiration dates for my 8500A printer

You can't. Information about ink level and an expiration date are stored on an integrated circuit (chip) on each cartridge. The printer reads that information from the chip, you can eventually buy aftermarket chips with auto reset ink level that are used when refilling cartridges.
