So far I have been good with removing all my printers and re-adding them...
The only issues I have are with our Fargo/HID Card printers... if we apply the Microsoft Sept **bleep**. Fix pack it breaks the card printers from printing. We have been forced to stay on the August ISO of Windows 10 21H1 for our VDI Desktops until there is a fix.
Fargo/HID has said they will not release any newer drivers... so frustrating. I was going to retest again with the Dec release and see if it has been fixed.

I stepped into that trap as well - but removing and adding printers does not help at all, only rolling back to the 6.x version UPD
I am not printing via print server, but directly from PCs and laptops.
Another important point to mention is that I have to restart the PC or the spooler service after removing the last printer to be able to remove the UPD printer driver and driver package, otherwise it throws an error that the driver is still in use.

Very Interesting.
I had a few printers that I had to roll back to 6.x as well (for whatever reason) they would throw the certificate error.
I am going to revisit this again soon. I was planning to try the latest 21H2 Release and see if there has been any improvements on Microsoft's end.
Next week I should have some results to see if anything is better.

Using print server, I had similar issues, but only on a handful luckily. I had to run the HP installer, but check the box to remove all UPD drivers first, by itself before reinstalling any printers. In my case, I didn't need to run the installer again, because I'm using the printer server, but a standalone printer would need to run the install a second time, obviously. I didn't not take any steps in between. If I had remove and reinstall checked, it did not work.
The odd thing is that I re-installed the same driver I had, but I have to set the printers to print directly, now, instead of spooling. If they're set to spool, they print blank pages. It would be nice if HP could get this straightened out. It's ridiculous. I understand it could be Microsoft just as easily, but this isn't the first time I've had a UPD go haywire.

Finally I managed to fix this by adding the following registry entry on the client PC (which is part of the remediation for the "Print nightmare"):
Windows Registry Editor Version 5.00
[HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Control\Print]
"RpcAuthnLevelPrivacyEnabled"=dword:00000000
UPDATE: This seems to work only with 7.0.0x drivers, NOT with 7.0.1x

we have the same problem here. unfortunately we only have the latest driver with which it does not work. the bigger problem is: where do you get the PCL6 - 7.0.0.X driver from? Unfortunately, this can no longer be found on the HP homepage. I'm happy about any information.

You can find older universal printing drivers on HPs FTP site:
ftp://ftp.hp.com/pub/softlib/UPD
EDIT: the most recent version seems to be from 2018 ...
