When I try to print, the printer screen displays a 'load photo tray' message. I've checked preferences and settings and the only thing that seems odd (if they're not always there) is that my print shortcut icons have all got padlock symbols on them

As I understand you are having issues with the printer keeps defaulting to the photo tray instead of paper tray on your HP Envy 7640 printer. Don't worry as I have a few suggestions which should help you resolve this issue.
To provide you with an accurate solution, I'll need a few more details:
Did you make any changes on the printer before the issue started?
Have you tried to perform a Hard reset on the printer?
Have you tried check if the tray is seated correctly?
In the meantime, let's try these steps here:
Perform a Hard reset on the printer and make sure that the printer is connected directly to the wall outlet and not to the surge protector.
With the printer turned on, disconnect the power cord from the rear of the printer and also unplug the power cord from the wall outlet.
Remove USB cable, if present.
Wait for 2-3 minutes, press and hold the power button on your printer for about 30 seconds to remove any additional charge.
Now plug back the power cable straight to a wall outlet without any surge protector or an extension cord and then plug back the power cord to the printer.
Turn on the printer and wait till warm-up period finishes and the printer is idle.

If you have followed the steps suggested and still having the issue, I would suggest the next step would be to perform an advanced reset on the printer,

Hello,
Would someone send me instructions on an advanced reset for my Envy 7640. I also have tried all above suggestions and my printer will still default to the photo tray instead of paper tray(especially online printing). After searching for a solution online it seems there are many other users that are having the same issue. I have changed the preferences on my pc to the paper tray and when it prints it errors and says the "photo tray is empty". Please help. It started aboiut 2 weeks ago.
