Yesterday I scanned some critical documents to my email then left for an appointment to deliver them. When I opened the email to create a folder to put the scan into, the email was there but my scan was not attached! Where is it? I can't get these docs back to re-scan!

Welcome to HP Support Forums!
I see from your post that you're having issues finding the scan attachment on your Chrome. No worries, I'll be glad to help you.
Have you tried to send an attachment and check if it appears.
In the meantime, let's try these steps here:
Let’s start by performing a network power drain. Follow the steps below:
Turn off all the devices connected on your network including the PC, Smartphones, printer, modem (if present) and router. Make sure all the devices in the network are turned off / unplugged.
Wait for 2-3 minutes.
Now turn on the modem if present. Wait till all the lights are steady and idle.
Then turn on the router. Again wait for a couple of minutes so that the lights are all steady.
Then turn on the PC and other devices.
To enable Web Scan:
- Open the printer's Embedded Web Server by typing in the printer's IP Address in your address bar.
- Click on the Settings tab.
- Click on Administrator Settings on the left.
- On the right, make sure there's a checkbox next to Web Scan.
- Click on Apply.
While you are on this page, I should mention that you do not want to check on Enable All or Control Panel lock. Doing so will render all of the features available from the printer's control panel unusable.
Alternatively, I would suggest here is to follow this video, which will help you with scanning from chromebook/webscan - Click here (This is a third-party link. Please do not click on any ad, image, download, popup or link or anywhere else as this is a third-party links meant only for viewing information).

Incase, if you find this difficult, If you have any android or ios device, you can use HP Smart app to connect the printer to the network.
For more details, please go through this link: HP Printers - Using the HP Smart App (Android, Apple iOS)
Hope this answers your question.
Good luck and keep me posted about the developments. If this helps, please mark this as “Accepted Solution” as it will help several others with the same issue and give the post a Kudos for my efforts to help. Thank you and have a great week ahead. 🙂

As you have mentioned in your post that you're able to see all the emails expect for one, this clearly indicates this is not an issue with the printer but to do with that single email.
I would suggest you can try to send an email again and check if that helps.
Let me know if you need any further assistance. I'll be more than happy to help you.
Take care now and do have a fabulous week ahead. 🙂
