How do I encrypt this?  Do M608dn Printers even have a Internal Disk/Hard Drive?

The M608 usually ship with a 16 Gb Emmc card (basically a micro SSD drive about the size of a quarter).  They do not always ship with a self-encrypting drive as that is an option on most of the print only printers. You could purchase and install a HP certified SED, but honestly it is highly unlikely anyone is going to remove the Emmc and try to attach it to another device and try to read it. If you are in an industry that requires the level of security you may need to though.
