Even when I choose US Letter from the page setup within Pages, when I get the print dialog box, the paper size is recognized as index card letter. The following error message pops up when I try to print 2-sided.
The Two-Sided option, Long-edge binding, is not available when the destination paper size is set to Index card Letter 8.5x11in..
I can, however print 2-sided from my Mac Mail.
What is the fix or work-around? I'm wasting way too much paper.

It turned out that the problem had to do with the paper tray. I loaded more paper yesterday and the printer properly recognized it as US Letter. Problem solved.

This could be an issue with the installed print drivers or the settings. Let us try to isolate the issue and resolve it. Try the steps below-
Check the settings before you send the print job to the printer. Refer to the document HP Printers - How to Print on Both Sides of the Paper (Duplex) (Mac) for help with two-sided printing.
Update the printer firmware
Download available firmware updates from the HP website
With the printer on and connected to the computer, go to HP Customer Support - Software and Driver Downloads, and then identify your printer. Look for and install any available firmware updates. Refer to the document HP Printers - Updating or Upgrading Printer Firmware
Remove and add the printer using AirPrint drivers
Click the Apple menu, and then select System Preferences.
Depending on your operating system version, click Print & Fax, Print & Scan, or Printers & Scanners.
Click the name of your printer, click the Minus sign, and then delete the printer.
Click the Plus sign, and then click Add Printer or Scanner.
Click the Use or Print Using box, and then select AirPrint
Click Add to add the printer to the list.
Try to print.
