I use remanufactured ink cartridges due to the expense of new ones. When I fit them I am told to realign but I don't think it is necessary and it wastes paper. I assume it is not illegal to use these cartridges, so can I delete this task completely and just realign when I want to?

I would suggest you complete the alignment process when cartridges are changed. If you do not the printer will likely print the alignment page every time the printer is powered on, perhaps it will stop after three attempts but in any case it will be more paper than just finishing the job the first time.
The alignment process also calibrates the required energy settings and temperature calibration for the cartridges. If you do not complete the process the printer may use default values or values from the previous calibration. While these will (probably) print they will not be optimum. It is very likely that you will use more ink with the default values than with the correct values.
