The documents that I want to print as booklets are printing too far over to the right-hand side, and therefore not aligning up.  I have changed various settings such as print to image, changed paper sizes etc. Any ideas please?

Printing from recent versions of Word:

The issue might be related to your general margins (as set in layout) plus the margin and "gutter" settings that control the bookfold margins (top/bottom/right/left) and the center "binding" spacing.

 

For example, if the document margins are set to "Narrow", the margins are set to 1/2 inch (0.5").  This may - or may not - be appropriate for the "look" of the booklet.

 

The correct setup for your document may take a couple of tries to get it the way you like.

 

Open Word document

File > Print > Page Setup > Tab Margins 

Section Pages - Multiple Pages 

Select Bookfold

Adjust Gutter size as desired
