I would like to set the default to print in black only, but also be able to occasionally print with color. How can I toggle this setting? The related previous questions seemed to be on non-Mac devices, so the advice did not help me. Thank you in advance.

Hi,
Follow the steps below in order to print using Black Ink only:
1. From the application used to print, click the File menu and select Print.
The Print window appears.
NOTE: The Print window might be minimized: Click the Show Details button to see all available settings.
If you see a Black&White Checkbox at the top of the print dialog, be sure to check it
2. To access the color options, click the lowest selection box listed as the name of the program (e.g. TextEdit)
Will appear as Copies & Pages within Microsoft Office applications.
3. Select Paper Type/Quality from the drop-down menu.
4. Click the triangle next to Color Options to expend the settings.
5. Set the Color field as Grayscale.
6. Set the Grayscale Mode as Black Ink Cartridge Only.
You may save the settings for future use by clicking Presets > Save Current Settings as Preset...
Whenever you use a preset to print, the used preset will remain default till another preset will be used in the future.

These instructions appear to be for a PC. The interface options on the Mac are different. What I found to be more helpful was the following: http://kb.mit.edu/confluence/display/mitcontrib/Change+the+default+print+settings+on+a+Mac. I will say that it is mind-boggling to me how much system-level tinkering is needed for this very simple modification that should be easily accessible to users.

These steps are surely for a Mac at least, for an HP Driver on a Mac computer.
There is also AirPrint option today which may include a bit different steps but the idea is quite similar:
