I am trying to disable sleep mode on an HP Laserjet 203dw

Available power option settings can be found in the user guide at support.hp.com. Looking at the manual about the best you can do with this model is in the Delay Shutdown menu and change it to "delay when ports are active". 

 

Most smaller office/home office products have limited options for power to ensure that the devices meet advertised "green" standards.

You don't say why you need to disable the sleep (Auto Off) feature.  If the reason is that the printer when going to sleep loses its network connection, take a look at my answer yesterday re my M255dw Laserjet and the solution I found.
