I work for a jeweler. We have always used our flatbed scanners to take "picture" of all items that are being repaired or appraised. I recently purchased two new machines which are Laser Jet Pro MFP M479's . I was thrilled until I tried to scan a picture of a jewelry item and it is out of focus. It seems to only focus on the very part of the jewelry that is TOUCHING the glass. Things such as rings have to have the gemstone facing the glass. The gem is in focus but the rest of the ring that is not is out of focus. This is a deal breaker. Is there anyway to fix this? Why would an old scanner do this but not a newer modern scanner do it?

The scanners nowadays uses a different technology, the sensor in these scanners are called CIS (Contact Imaging Sensor), and true to the name, CIS has very little depth. The older scanner you used is probably a CCD one, which has a good depth.
Take a picture using smart phone probably is a better alternative.
