I just bought this printer to replace my HP Officejet Pro 6970 All-in-One Printer.
I bought this model because it has a document feeder.
However, I can find no way to do 2-sided to 1-sided copying or scanning 2-sided docs. I could do both with my old, much cheaper, printer.

The old OfficeJet Pro 6970 series did indeed support automatic 2-sided scan --
This printer, not-so-much.
True - things were less expensive "back in the day" --
You still get what you pay for -- Today, what you pay for costs more for less.
Sign of the times...
Which Printers still have these features?
Now you need a "top-tier" printer to get automatic 2-sided scan (and perhaps 2-sided Copy, too).
One Example: OfficeJet Pro 9135e
OK -- According to the documentation,
This printer does not support automatic 2-sided scanning.
According to the documentation,
This printer does not include 2-sided copy > 2-sided copy
The use of term "According to the documentation" is deliberate -- I was burned recently while depending on the documentation for this series to answer a different question.
That said, if you don't find a feature with the printer right in front of you, that feature does not exist.

HP Scan -- part of the Full Driver printer software for Windows - includes all the options available for the particular printer, including (where appropriate), Page Sides = 2-sided (Manual)
HP Universal Scan -- also part of the full driver OR supported on this printer as a separate software - includes all the options available for the particular printer, including (where appropriate), Page Sides = 2 -sided (Manual)
2-Sided (Manual) can help reduce the pain to "tolerable".

Some printers still support the older full driver printer software format.
