Awesome! Thanks for the tip. Your solution did the trick. I have an iMac desktop so I opened the Applications folder and moved all HP apps to the trash, then emptied the trash and restarted the iMac. I then downloaded the HP Easy Start Driver (at the bottom of the list) from the HP website (https://support.hp.com/us-en/drivers/selfservice/hp-officejet-pro-6970-all-in-one-printer-series/828...). Folks with other models will need to adjust the website, but I wanted to get anyone else interested in the solution into the neighborhood for the software. I did not bother with the HP Smart for Desktop app. The system went through the download and installation. Printer works. I just scanned 4 pages through the continuous feed scanner and it works again.
Thanks for everyone for other solutions! All solutions were viable. I greatly appreciate everyone's feedback and advice. Kudos to you all.

This solution no longer works. If you try and find drivers it will say there are none for the OS detected. If you roll back to the Easy Start app for the last OS that was supported and try and run it, it will tell you that they were not able to located software that will work and to contact HP Support. I had to use the HP Smart App to set up the printer, and Easy Scan still didn't work. I uninstalled Easy Scan and downloaded it again from the App Store, which downloaded a new version of the app, and it works fine now. So in short, probably all someone has to do is uninstall Easy Scan and download it again. Not sure why they couldn't just send out an update to the app rather than an uninstall and reinstall.

Please let us know your printer model @ClintMoses, a solution for one model is not necessarily the solution for another model.

I haven't consciously done anything but somehow this problem seems to have corrected itself. I am using a MacBook Pro and an HP 8015 all-in-printer/scanner. When I downloaded Big Sur I found I couldn't scan using easy scan no matter what I did.
I found I couldn't use the fixes I read about because I couldn't download anything even to uninstall Easy Scan. I eventually deleted the easy scan application but I can't be sure that this would have really wiped out any residual bits of HP code. I re downloaded Easyscan from the Appstore but it still wouldn't scan more than just a single page of a multi-page scan.
I reported the issue into the Apple support forum and into this HP Support Community. I swapped to using Image Capture for a week or so. I tried Easyscan once again and found it worked as well as ever. My printer is always online to HP because I use the HP instant ink package. I suspect HP may have applied an update without my knowledge. Is that likely, I wonder?

I have a Deskjet 3510 and it was fixed after a long conversation with an Apple rep after I installed Catalina.
Now, after installing Big Sur, I am having the same issue of scanner not working.
Whatever you do ..... DO NOT REMOVE YOUR PRINTER. HP SAYS: "YOUR HP DESKJET 3510 SOFTWARE DRIVERS ARE NO LONGER AVAILABLE" -
HP WANTS US TO GO OUT AND HAVE TO BUY A NEW PRINTER. SAME TACTICS AS APPLE.
Apple says call HP, HP says "DUH".

I had the same problem So I gave up and started using “image capture”. It is a piece of software that comes with every Mac computer. I use a Mac book pro.
About three weeks after I started using Big Sur I went back and tried to use easy scan. To my surprise it worked.
I recommend patience. Image capture it’s not quite as good as easyscan but it’s much better than having to buy a new printer scanner.
Perhaps try a week or two before you use is discount again. It might work just as it did for me. Regards, Patrick

I don't really know but the problem had disappeared when I tried again after a few days. As my earlier post all I had done was to complain first to HP help and also to Apple. I told them the model of printer and described the problem but I didn't expect much. After that I used Image Capture instead of Easyscan. It worked ok but is a bit clunky. It is good at doing some things even better than EasyScan. One is a facility at detecting and scanning separate items on the glass. It then lets you choose whether to put them into a single file or save them as separate files
I was really surprised to find that Easyscan was back to normal a few days later
