Hi folks. HP have put an updated driver PLUS version 2 of Easy Scan on the Download site, and everything works perfectly again under Ventura 13.0.1. Without the HP update I was still having Easy Scan crash even after the Ventura patch, so I think that you really do need the updates from HP too.
Link for the download of HP Easy Start (it connects to your printer/scanner and then does the download and install of the new driver and software), is at https://support.hp.com/us-en/drivers/selfservice/hp-color-laserjet-pro-m180-m181-multifunction-print... (this is for the M180-M181 series - poke around if you have a different model and you'll find yours).

Hi Gaitero. As I posted above, HP have put an updated printer/scanner driver PLUS Version 2.0.0 (220518) of Easy Scan on the Download site, and everything works perfectly again under Ventura 13.0.1. The new version of HP Easy Start for me gets me something along the lines of "not able to be malware checked by Apple, software needs to be updated by manufacturer". Sp HP website says that it is an updated driver for my printer but Apple does not want to download it without an override.

I did check HP Easy Scan and it does ok for me (HP ENVY 5660 with Airprint) right now without upgrading to a different/newer version of HP Easy Scan than what's in the App Store, including multiple pages. I may update later (from the HP website) if needed though.
Edited to add: I did change back from "PDF-Searchable" to "PDF" and also from "PDF/A" to "PDF" on Easy Scan -- not sure if that made a difference though.

I have a Office Pro 8620 printer/scanner, and I can tell you -for trying all your suggestions and downloading the HP Easy Scan driver myself 5 times for my type of printer- that HP Easy Scan driver is NOT working, or has not been adapted by HP to Apple iMacs on Ventura. When I try to open the downloaded file, a message from APPLE says something like "Apple does not want to open this thing that has not been verified for malicious content." And the buck stops here: no opening, no way. So there you are! I am using meanwhile the HP app because it is the only way I can scan anything now. It is cumbersome, but it works OK. HP is just late to the Ventura party, or it does not bother updating their drivers for older printers like mine.
