I understand you have issues with scanning. Let us try using the HP Smart App to scan. Refer to the document HP Printers - Using the HP Smart App (Mac) for help.

I understand your concern. HP is working with Apple to get HP Easy Scan and Scan to computer back to full functionality as quickly as possible.

I installed the HP Smart app as recommended by TEJ1602 (I am using macOS Cataline with an Officejet 4650). Fired up the app and after a bit of fiddling to register the printer and create a new account to use with the app, the moment came to try my first scan. Remember, the original problem was an inability to scan a multi-page document into a single PDF file.
I am now able to report that, when you have PDF output selected on HP Smart, it will output multiple scans into a single PDF document by default. Problem solved.

Using the HP Smart app, I have indeed been able to scan from the glass (one or more pages).
The problem (at my end) exists when trying to use the "HP Easy Scan" app which comes default via the "HP Easy Start" software (optionally installed with the driver).
Unfortunately no new update since 18th of december.

Hi,
No new updates since 18th of December, as no need for an update on the HP Easy Scan app.
Updating your macOS version to 10.15.3 resolves the HP Easy Scan problem and it will then function correctly on Catalina:
