Is there a way to setup the scanner so that when I scan a document, the area scanned includes only the document itself and not the entire scanning bed? As it stands now, I have to crop every document to remove excess scanning area that is not part of the document.

Install the Full Feature Software for the printer.
Printer:

Printer Assistant (icon on the desktop) > tab Print, Scan & Fax >
Scan a Document or Photo > Save as PDF >
Adjust Scan Size area to match your document size > Scan

Is there someone from HP I could contact who would definitively know if this feature exists or not for the Officejet J4680 All-in-One, rather than poking around in the hopes that it is there (and perhaps not realizing it because it's called something by HP that I would not recognize)?

I apologise for my unfortunate choice of words.
In so much that I am aware:
If the feature is not listed -- or is grayed out -- in the Advanced section, then auto-crop is not supported on your printer.
The exact wording might vary; you would recognise the meaning.

Step 1. Open link: www.hp.com/contacthp/
Step 2. Enter your computer's Product Number OR select Auto Detect
Step 3. Scroll down, find: "Still need help? Complete the form to select your contact options"
Step 4. Scroll down, Click HP contact options > Click Get phone number
