The HP Smart application for this setting appears to be similar to the way that HP Smart for Windows works.
That means the application can support Scan > Document > Preset Document > 2-sided > Source Document Feeder.
The limitation appears to be your printer model:
Product Specifications for the HP OfficeJet Pro 8025 All-in-One Printer (1KR57A)
Maximum ADF scan size (metric) | 215 x 355 mm (one-sided); A4, Letter (one-sided) |
Maximum ADF scan size (U.S. standard) | 8.5 x 14 in (one-sided), A4, Letter (one-sided) |
You can scan two-sided but you have to do so manually using "Add Pages"
