Why does Axtorism say the problem has been solved? He/she doesn't give any solutions - just says Easy Scan can be installed and works fine with Sierra.
I am having the same problem - my HP Easy Scanner just quit scanning one day. I can print from my macbook and can still use the terrible scanning program that comes with the laptop, but the HP Easy Scan does not recognize my printer anymore. I have turned everything off, I have rebooted, I have uninstalled & reinstalled HP Easy Scan, but still the below message:
Scanner reported an error
HP Officejet J4680 series is currently unavailable. Ensure your device is powered on, check the connection, and ensure your network is functioning properly. If these conditions are correct, restart the device and try scanning again.

If you are unable to use the scan to my computer on the HP scanner to MAC's running OS X Sierra do the following.
Here's the fix for the option that used to work on older HP all in one printers. Examples HP 4635 and HP Envy 110
First download this driver

Next open up finder on the MAC. Under Devices click on the Macintosh HD. This is the Hardisk were everything is installed.
Once you click on it you will see folders. Click on Library and then find the printers folder within the Library folder.
Click on the Printers folder and drag the hp folder to the trash can. Once you have put the hp folder in the trash can open system preferences. Click on Printers and Scanners. **** The Next step will remove all printers setup on your MAC. You will need to add all the printers back at then end of the tasks below.
Control click on the HP printer/scanner and reset printer system.
Now install the driver you downloaded above. Follow the prompts and finish the driver install.
Now up in the upper right corner click on spotlight search and type disk utility. Click on First Aid and run it. Once first aid is complete. Go back into system preference and add the HP printers/scanners. Add the other printers you had installed too. These would be the non hp printers if you had any.
Once this is complete. Place the Paper in the ADF or on the flat bed. Click on the window on the printer/scanner and click scan to my computer. You will see your mac listed and you are done. YEAH it works again. 🙂

Well, that ALMOST worked, but was also almost a disaster. But there's a happy ending.
As to the recommended solution, I carefully followed all the steps that were outlined. Lo and behold, the affected computer did indeed show up on the printer's panel as a "Scan To" option, but unfortunately, nothing would scan. Even worse, the computer-initiated scan option offered through HP Easy Scan was now disabled -- so I was left without any scan options at all!
So, in a fit of pique, I went into Time Machine and restored the deleted HP folder to Library>Printers. Then I removed the HP printer from the list of printers, moved both HP Utility and HP Easy Scan into Trash, and rebooted the Mac for a fresh start.
Then I added back the HP printer, (re)downloaded all the associated software from HP, including HP Easy Scan, and gave it a go. To my utter astonishment and delight, everything now works! The affected computer shows up on the printer's panel as a "Scan To" option -- and it works this time -- and I can also initiate scans from the computer using HP Easy Scan.
I am not sure what exactly did the trick, but I hope that wiping the slate clean on the Mac (by deleting the printer and deleting all the HP software and then rebooting), and then reinstalling the HP software, will work for others.

I have an HP C6180 Photosmart. I have had repeated problems over the years scanning and tried many work arounds often to no avail. Printing, copying and scanning to USB OK- but Wifi scan to computer using HP software never.
Currently using OS 10.12.3 Sierra on iMAC and "latest" HP drivers
One Solution; Go to
Launchpad
Settings
Select Printers & Scanners. (Printer series found)
Switch to Scan & click on Open Scanner.
Opens, selects options and all works - for me

HP Easy Scan 1.6.0 won't locate my scanner. I'm running Sierra (on my 2015 MacBook Air). Prior to Sierra I had no issues scanning and I cannot figure this out.
