This major issue has been brought up multiple times. The newer HP all-in-one WIA drivers have reduced functionality from what the previous drivers had for many years.
A previous poster had the same complaint and referenced an even earlier post with the exact same problem:

Specifically, when scanning directly into another piece of software (not HP Smart), the scanner always defaults to the preset that cannot be changed (Flatbed, Legal size). When trying to use the ADF I really need this to be ADF + letter. Additionally, it refuses to scan more than 1 page at a time. So, a 4-page document requires changing the settings 4 times!!!
The HP Smart scan is functional, but it cannot compete with the file handling of other software. A 4-page document from HP Smart took up 2.5mb but the same file scanned into Adobe acrobate only use 194k! So now I have to scan in HP Smart and then reprocess in Adobe Acrobat to achieve reasonably sized documents.
The major pain point here is that this all worked before the latest driver update. Please, please, resolve this ASAP.
