I suddenly cannot find scanned documents on my mac.

I see that you're unable to locate the saved scans on your Mac. I would be happy to help you and please remember to return to this thread and mark 'Accept as Solution', if I have successfully helped you resolve the issue. Which application are you scanning with?
 
What is the full name and product number of your printer? 
 
Have you changed the scan destination location?
 
You may change the default location for the scan button via the HP Utility:
1. Open the HP Utility and select your device.
2. From Scan Settings open the "Scan to Computer".
3. Click the "Scan Tasks" tab.
4. Select the Scan Shortcut used to scan, then click Edit.
5. In the section of Scan from an HP Device, click the Show Details button to enlarge the menu.
6. From the enlarged menu locate the Move Finder items section and set your destination folder as needed.
7. Click OK and try scanning again.

Otherwise, I would search the Mac for JPEG or PDF files to see if you can locate where the scans are being saved.
 
Depending on which application you're using, this guide provides information on how to scan with alternative applications and shows you how to change the scan destination.
