I just purchased a 9730e wide format printer.
Can I copy and reduce a legal size document to a letter size document from the scanner flat bed and/or the document feeder using the printer menu.
This was a preset on my old hp 8620 as was "2 to a page". My 9135e did not have these options on the printer menu (it only lasted 6 months before the paper feed malfunctioned).
Before I open the box, I am hoping to find out if anyone here actually uses this feature and knows if the new 9730e has these options on the printer menu.

What do we have now?
We have access to the printer specifications and the printer Datasheet document.
The documentation hints at the Copy settings but does not include the level of detail you seek.

I have an OfficeJet Pro 9135e -- the features you seek are available in EWS.
True - EWS does not indicate what is included on the printer control panel.
In GENERAL, I believe the 9730e can do what the 9135e can do with the obvious addition that the 9730e supports the larger paper sizes.
Open your Browser > Type / enter the Printer IP address into URL / Address bar
Section Copy > Default Copy Options

If prompted for a password, enter the default printer PIN available on the label inside the printer access door. If
you have changed the password, enter your new password.

How you scan the content depends on your Operating System / version and the app / software you use to configure the job.
After the content is scanned and saved as a document, the file can be opened and printed as you like.

Print Document
Once scanned, the printer can print the document the way you want it done.
2-Pages per sheet is easily done using an app or software that includes the feature and is compatible with your Operating System / version.

Reminder: The size of the output pages depends on the size of the paper you are using.

Thank you for all of your information. I did not know what EWS was so. I looked it up. That is what I was trying to get away from. The HP 8620 had everything I needed right on the printer menu. The 9135E made you work through The EWS.
I went ahead and set up the 9730 E. I couldn’t be more pleased that it is just like the 8620 in that you can access all of your options from the printer menu without having to go to an app or website.
I had a number of small receipts and I could put them on the scanner glass and print from tabloid size to “fit to page”. the printer automatically knew it had letter size paper to print on and fit all of those receipts onto one page.
I gave so many details because if anyone else is interested in using the 9730e I thought it might be helpful.

EWS is a powerful asset to add to your toolbox -
That said, if you wish to avoid using it, do that unless you need it at some point.
What?
Typing on a regular keyboard, for some folks, at least, is easier than using tiny phone screens.
Network connection, Security, and Scan to Email setups come to mind.
Should you have questions, do ask or peruse the EWS menu for help.
