I can't scan to an email address. The option of adding an email address is not showing on the HMI. The only two available options for scanning are the computer or USB

Welcome to the HP Community --
True: This printer does not support Digital Send > SMTP Scan to Email Profiles.
The printer does at least appear to support the Apps and PIN method.
See the User Guide >> Page 42
What else?
Depending on your Operating System / version,
HP Smart might support Scan and then Share (to email) --
Use of the word "might" is deliberate -- the standard HP Smart - Windows - Share method has been upended by the advent of Microsoft replacing Windows Mail with the "new" Outlook app. For the moment, at least, the new Outlook app is fairly useless in the context of using HP Smart > Share (Email). Not Windows? -- Ignore, none of the comments are relevant. What? HP Smart - Mobile - Scan > Share is not in any way dependent on Windows mail or Outlook.
Also Windows --
HP Scan might be able to Scan and send to email -- this approach, if it is supported, requires an installed email client, think "Outlook" of the software variety (like the Outlook included in Office software).
Were it mine to do, for now, at least:
If nothing works,
if I really wanted to use Scan to Email as opposed to scan > save > open email > attach scanned / saved file,
then I might stick to using other methods to accomplish the task (HP Smart - Mobile?) .
