I followed instructions from other posts to do it from the Control Panel, but I do not see any box to untick notifications/ alerts from as mentioned here;
The same goes for the HP Assistant & HP Smart apps. I have disabled the chip monitoring from the HP Smart app settings, but the printer still reads my ink levels.
I would like it to stop reading the ink levels completely, because it doesn't let me print many times because of 'low ink', even though it works once I go over the alert, it is simply annoying.

Welcome to the HP Support Community.
I'd like to help!
Try the following:
Highlight your printer, click Printer server properties, then click the Advanced tab and uncheck both "Show informational notifications..." boxes. Apply and click OK.
Also, verify that you don't have a program called Growl installed or running.
