Good morning. I am trying to print on a custom-sized paper but the OK on the HP 'print settings' is greyed out. When I select the custom size I've created and named, the Advanced box comes up and I change it there too. Still get a greyed out OK. The same happens when I try to print A5. I am using Open Office. Thank you in advance.

Before you send the job to the printer and right after you change / load the paper into the printer tray,
Be sure the printer is aware of the "different" paper loaded into the printer.
Basics
Load / Check paper size into printer
Check / Adjust at the printer display panel and / or EWS
Windows >> Adjust Printing Preferences / Shortcut
Details
Load the paper into the printer according to the instructions in the printer user guide.
Paper already loaded?
Open tray – Wait a few seconds – Close tray - Update information - Continue
Done that? Stuck?
Open tray - Remove paper - Gently flex the stack - Return paper to tray - Close tray - Update information - Continue
Check / Adjust / Retain the Paper at the Printer Display Panel
Section is not applicable to printers lacking a printer display panel.
Open Printer Tray,
If you have not yet done so, Remove / add desired paper size - type
else
Wait a few seconds
Close Tray
IF applicable for your printer:
On the Printer Control Display Panel,
Click Modify / Change / No-Yes (wording varies), adjust the paper size and type, Click OK
No Size? If the size of the Paper Size is not in the Drop-down list, Select Custom

If the EWS feature is supported on your printer,
Use the Embedded Web Server (EWS) to view / configure your printer.
Verify / Update Tray and Paper Information
EWS – Browser
Open your favorite browser > type / enter Printer IP address into URL / Address bar
Tab Settings > Preferences > Tray and Paper Management
If applicable, check the Advanced section (at the bottom of the Tray and Paper Management menu)
Click Apply to save changes
EWS - HP Smart for Mobile - iOS
Reminder: The EWS Tray and Paper settings must be updated before you open the object to be printed.
Open HP Smart (for mobile)
Open Settings
Open Add / Set Up a Printer
Scroll down, Click, Tray and Paper
As Available: Check / Adjust settings in Advanced
Click Apply to save changes

Set the Preferences – Windows
This section is not applicable to Mobile Printing.
Printing Preferences are available directly from the driver and / or might be called "Printer Properties" / "Shortcuts" (or similar) from within printing software / applications.
Preferences and Envelopes:
Select / leave Printing Preferences shortcut to "Everyday Printing" or something equally benign.

Preparation > Check / enable the printer as the “Default Printer”
Settings > Devices > Printers and scanners
UNCHECK (clear box) Let Windows manage my default printer
Select (Left-Click) your printer from the list of printers > Manage > Set as Default

What else?
You mentioned that you could not adjust the Custom form setup.
If that has been cleared by creating the Custom paper form(s) using Printing Preferences,
that is, you do now have a "custom paper size form" that you can see and select,
Any final "can't get there from here" issues might have to do with the actual document.
What to do?
Create / Edit the page size of the document itself to match the dimensions of the paper on which you will print that document.
Creating the document in the same size as the paper might not be necessary - doing so might eliminate some possible odd behavior.
Reminder:
Be sure you don't make the margins around the edge of the document too small - might be best to stick to 1/2 inch all around.
Document Page Size Setup
I don't have Open Office Installed.
I would guess the location where you change the Page Size is not the same as would be done in Word - of course, if it is, easy to change: Word document open > Layout > Size

Might be similar to Open Office in this respect...
Open document in Writer (or whatever Open Office calls "Word)
Format > Page Style
Adjust the Paper Format for format type, width, height / length, orientation.
Save...

Dragon-Fur, I hope that was a cut-and-paste for you - thank you so much for taking the time to explain all that.
The only question I have left is, how can this be called a 'smart' printer when it doesn't by itself print a very common paper size? 🤔

You are welcome.
"Smart" is a catchy phrase that has perhaps been a bit overused. Smiling.
That said, "smart" is always relative.
Personal Opinion - Printers that "can"...
Having to instruct a device (printer) how to do something is not nearly as frustrating as having a device that cannot do what you want.
Printers - of any brand - fall into that category of products: "You get what you pay for"
For example,
The more expensive, top-of-line, OfficeJet Pro series do provide a different experience from lesser grade models.
A couple of the new top-of-line DeskJet Plus models do get closer to the "Office Pro" printer level of performance.
"Cust and Paste"
Sure - all of us copy content when we can do so - we also create modules to answer those "oft asked" questions.
Personally, I use a combination of "module" and personally typed responses.
Yes, true - in spite of having been called a robot more than once - I do actually type out, read, and consider how I answer. Smiling.

It's an awful lot of work you've done and I hope it helps others as much as it has helped me.
Though I'm afraid I'm of an age that I miss turning a printer on and pressing 'print'. There were always problems then, too, engendering a very funny standup ('Eddie Izzard - Print' [no swearing])
