I am a different user with an HP ENVY PHOTO 7155 using "HP SMART" on a Windows 10 PC with the same issue; that is, when I EDIT a SCANned document there is no way to SAVE it!!
An "Accepted Solution" is to uninstall the app; however, in the CONTROL PANEL list of programs to UNINSTALL this app is not listed.
I tried to reload the app and was given a message that "this app is already installed" or words to that effect.
I am really not satisfied with this HP Smart app (or whatever this is called).
I would really appreciate the opportunity to TALK with someone, this has already cost me several hours to get past the VIRTUAL AGENT with the inappropriate answers and circular connections.

@caseyjl, Welcome to the HP Support Community!
To uninstall an app:
-
Select Start and look for the app or program in the list shown.

Press and hold (or right-click) on the app, then select Uninstall.
Use the HP Scan Extended app to scan and check if that helps.
Click here to download the app.
Once it's downloaded and installed, go to Start > All Programs > HP > HP Scan Extended > Run "HP Scan Extended".
If this is not satisfactory, then we need to install the full feature printer driver.
Click here to download the HP Full-featured driver.
Once downloaded, make sure to run the file to start the installation and follow the on-screen instructions.
Refer to this document to know how to scan and save.
