The only option is to perform an OOBE reset.
The reset instructions are specific for your printer and performing those steps on a different printer may brick the device.
I've sent you a private message with reset instructions, follow the reset instruction to perform a full reset and re-initialize the printer.
In order to access your private messages, click the private message icon on the upper right corner of your HP Forums profile, next to your profile Name or simply click on this link.

Can you please send the override instruction to me as well? My dad received the HP Envy Photo 7855 as a gift but unfortunately threw out the setup cartridges with the box. I purchased new ink cartridges, but am stuck as it keeps asking for the setup cartridges. Please help!

I am having the same issue. I either did not get the setup cartridges or I happened to throw them away on accident. Either way, I don’t have them and can’t seem to bypass it. I have the HP Envy Photo 7855. Any help would be appreciated as to how to bypass the ‘setup cartridges’ part of the set up. Thank you.
