Thank you to everyone who suggested completely removing and reinstalling the printer and HP App. This worked for me. Although I had previously re-installed the printer, I don't think I had removed it from every possible place.
For anyone else in the same situation, I followed these instructions (https://answers.microsoft.com/en-us/microsoftedge/forum/all/how-do-i-uninstall-and-reinstall-a-print...) and the printer is now working again.

Thanks to all, printer is now working. I deleted the printer from HP App and Windows control panel. I used HP App to reinstall. HP Envy 6100e is now working with Windows 11.

HP Smart Tank 7600 Series
I am having the same problem, was only printing a couple of days ago, however since then my system has updated during the night;
- 2025-05 Cumulative Update Preview for Windows 11 Version 24H2 for x64-based Systems (KB5058499)
 Successfully installed on 30/05/2025

I couldn't find a way to delete the printer from Windows 11. Can you explain how to do that?
I did the uninstall and reinstall of HP App as per the instructions on this page and it made no difference. I can print from my Mac, but not from my work Windows 11 laptop.
