My HP OfficeJet Pro 6978 printer has been stuck with this message on the printer screen for over 15 hours: "Printer maintenance is in progress. Do not interrupt." This happened after I changed an ink cartridge, and has never happened before. I print/scan from a MacBook Pro, macOS Big Sur 11.1 (which I don't see as an option in "operating system" drop down menu). My instinct is to unplug for a bit and then plug back in, but I don't want to ruin anything...

Let's try a power reset on the printer
Reset the product
With the printer turned on, disconnect the power cord from the rear of the printer.
Unplug the power cord from the wall outlet.
Wait at least 60 seconds.
Plug the power cord back into the wall outlet.
Reconnect the power cord to the printer.
Turn the printer on. HP recommends plugging the printer directly into a wall outlet.
Also, try updating the printer's firmware -HP Printers - Updating or Upgrading Printer Firmware
