PC running Windows 10 64-bit
Connection via USB
1) Does anyone one know what happened to the option of 'manual' double-sided scanning (where you run the documents through the ADF, rotate them by hand to scan the other sides and the software sorts the pages for you) went? This existed on my old HP All-in-one printer. The HP Smart app which is the only driver I could find to download has very few options and this is not amongst them?
2) My researches led me to believe there would be a 'scan to editable document' option. Again, I cannot find this in the printer driver.
Can anyone help?

Welcome to the HP Community.
If you have not done so, do install the Full Feature Software / full driver printer software.
Manual 2-sided scan is available using HP Scan (part of the full driver software).
A link to the video showing the procedure is included later in this message (Section References / Resources)
OCR is not specifically listed in the Specifications - if the feature is supported in the driver, you will find it it HP Scan.
What else? OCR is available using free or purchased options.

The full driver provides the foundation on which other programs and printing software depend.
Preparation
If you have not done so,
In addition to the HP Smart application,
Install the Full Feature Software / full driver printer software for the printer.
HP Smart and other print software / applications benefit from having the full driver installed.

If the full driver printer software is installed, you will see the printer listed in Control Panel > icon view > Programs and Features.
The installation of the printer software adds two shortcut icons to the Desktop.
The Printer Assistant is named for the printer and provides access to Print , Scan , and Tools
HP Scan is named for itself and provides a direct call to the HP Scan software.

Printer software not installed?
NOTE: If the printer software is installed but not working,
Uninstall the printer software from Control Panel > icon view > Programs and Features
Restart the computer and log in
Install a fresh copy of the Full Feature Software / Full Driver printer software

Method - Use the Easy Start Wrapper to Install the Full Feature / Full Driver Software
For printers that support the option,
Use the Easy Start wrapper to install and configure the printer software.
- Home Page - HP Easy Start
- Open Category Software and Drivers
- Topic: Software-Utility
- Download-and-Save the current version of the Easy Start wrapper to install your print software
- If using USB: Disconnect the USB cable between the printer and computer before installing the software.
- Right-Click on the downloaded package and "Run as Administrator" to start the installation
- When asked, Select to install the “Full Driver” / “Full Feature Software”
- If using USB: Connect the cable when instructed to do so (near the end of the installation process).
- After the software is installed, Restart the computer and log in.

- Full Administrator Rights are required to complete the HP Software installation.
- About 2/3 of the way through the setup, you will be given the opportunity to select the software - select the "Full Driver" set (as opposed to the basic driver or other application).
- You can skip / ignore suggestion(s) that you add the HP Account – you’ll need the account at some point, for now, you can skip this suggestion (as many times as it insists it’s a good idea) during the full driver software installation.
- If you see it, you can skip / ignore suggestion(s) regarding Instant Ink subscription. Instant Ink subscription is NOT mandatory.
- Full driver includes print and scan functions supported by your printer and provides the printer features on which other applications / software might depend.

If your printer / printer software does not include OCR,
You can obtain free or purchased versions of the OCR software to use.
One suggestion to try / investigate...
NAPS2 – “Not Another PDF Scanner” (Free – Donations gladly accepted by the NAPS2 organization)
- Download-Save-Install > NAPS2
- Not another PDF Scanner – free program scans PDF files and image(s) as .jpeg or PDF file(s).
- Not always simple “Plug and Play”, nonetheless, this free software is powerful and configurable.

If it works (can be installed and is functional in your environment),
HPSE provides some nice features, including Detect content boundary options and More > Destination folder assignment.

- HPSE is a subset an older Full Feature Software suite.
- HPSE features are very similar to the HP Scan Software released after 2015.
- Although HPSE appears to be a separate software, HPSE is dependent on the infrastructure provided by the Full Feature Software (full driver). The Full Feature Software for your printer should be installed before installing and using HPSE.
- OPTIONAL: Add HP Scan Extended shortcut to Taskbar / Send to Desktop / Pin to Start
- Open File Explorer > Navigate to C:\Program Files (x86)\HP\HP Scan Extended\bin
- Right-Click HPScan.exe > Select Pin to Taskbar
- Right-Click HPScan.exe > Select Send to Desktop (Create a Shortcut)
- Right-Click HPScan.exe > Select Pin to Start

Hello
I had a reply from Dragon-Fur which was quite detailed (many thanks).
I tried to follow the instructions concerning the installation of the full drivers (see below)
Use the Easy Start wrapper to install and configure the printer software.

However, when I run the Easy installer, I do not get the option of installing the full driver. Rather, I get the options of either going on-line or using the CD. If I go on-line, I end up with the HP Smart app (again) which has the very limited option set.
Again, can anyone help with this new issue?

Will try to help.

The Officejet Pro 8025e is an HP+ printer. We strongly encourage to Activate HP+ (to get the 2 years warranty) and Enroll to an Instant Ink Plan to enjoy the Free Trial of Inks (you will not be charged until the end of the trial) and enjoy the Instant Ink savings.
In order to do that, the printer needs to be connected to the network and one easy way to do that is to setup and onboard the printer using the HP Smart app (which can be downloaded from Microsoft store or 123.hp.com for a computer or Play Store or Apple Store if setup is done via a mobile device).
Not sure if you have went through that and if you have "declined HP+", then the printer is a standard printer (no more HP+) and it can only accept Original HP Print Cartridges.
Assuming the printer has been onboarded and connected to the network successfully, try to download and install the HP FULL software. For the video

If still not able to install the FULL software, would suggest to uninstall and reinstall the FULL software again.

Printer still needs to be connected to the network once in a while for HP Cloud to authenticate HP+ status. (if it's activated)

Dear Greenturtle and Dragon-Fur
Thank you both, particularly for replying so quickly. In the end, I did manage to get the driver (the one which shows the dialog you have in one of your responses) installed and talking to the printer. And yes, the video did help. I did get the scanner to work in a test run, as well.
However, the dialog comes up very small on my monitor with no possibility to resize (as far as I can see). I have a 27" 4K monitor but every other software package displays or can be set to display correctly. Any ideas?
Regarding your comment about HP+ and original cartridges, I have two questions
1) does that mean that if I don't register for HP, it will only accept new original HP cartridges, as opposed to refilled ones?
2) am I correct in thinking that this printer will only accept HP cartridges (new or refilled by some HP service) and not third-party compatibles?
I will be writing to HP to complain about how difficult this process was and how confusing the messages from the software are. I would never have got to this point without your help. I am also very and unpleasantly surprised by the fact that HP attemps to push the user toward the HP Smart app which has many of the features removed.

Tiny Menu
The dialog - perhaps you are referring to one of the printer software menus - is displayed at the size(s) set in the coding used to build the program / software / application.
I would guess that the reason for the "tiny menu" : This menu / dialog - and / or any other menu / program displaying the same behavior - is not written to accommodate the very high display resolution in your 4K moni8tor.
That's not an excuse - and it may be wrong - it is merely my opinion.
There are - as you are aware - settings in Windows to mitigate the effects of "tiny menu" issues.

Note
Firmware updates do not insert the Dynamic Security into the printer.
That said, each Firmware update checks / (re)enforces the security in the printer.

My interpretation of the information:
If you sign up for HP+, you receive the benefits described at the Website.
"With HP+" > You are required to use only HP original cartridges in the printer - not HP chip refilled - new original HP cartridges each time the ink is changed out.

Pushy Application
HP Smart is an application meant to bridge the gap between the full driver software and the desire by many users for a compact, easy-to-use, and platform-friendly application.
HP Smart: Better each version - Not perfect - and apparently not for everyone.
In many ways, the application is a reflection of the Full Driver software - the UI (presentation) is decidedly different, of course. There are some differences in how to find, set, and use the Editing and Shortcuts for different kind of printing.
True - HP Smart Windows does not support printing from Word and other Office and "not" office products.
For that, you need the full driver.
